Ingredients
  

For the Cookies:

  • 1 cup 240g smooth peanut butter (no added sugar)
  • ½ cup 100g brown sugar substitute (e.g., erythritol or monk fruit sweetener)
  • ½ cup 60g vanilla or unflavored protein powder
  • 1 large egg
  • ½ cup 85g sugar-free chocolate chips (optional)

For Serving (Optional):

  • Pinch of flaky sea salt

Instructions
 

Prepare the Dough

  • In a large bowl, I combine 1 cup peanut butter, ½ cup brown sugar substitute, ½ cup protein powder, and 1 egg, mixing until a thick dough forms. If using, I fold in ½ cup chocolate chips for added flavor in these healthy protein treats.

Form the Cookies

  • I shape the dough into 12 equal balls, place them on a parchment-lined baking sheet, and flatten gently with a fork or hand for even nutritious cookies.

Bake

  • I bake at 350°F (175°C) for 10–12 minutes, until the edges are just set. I avoid overbaking to keep these chewy protein snacks soft, as they firm up while cooling.

Cool and Serve

  • I let the cookies cool completely on the baking sheet to maintain their texture, sprinkle with sea salt if desired, and serve, enjoying these nutritious cookies.

Notes

  •  Any smooth nut or seed butter will work.
  •  Or any granulated sweetener
  • For an eggless option, use 3 tablespoons of ground chia seed. 
  • TO STORE: Leftover cookies can be stored at room temperature, in an airtight container, for up to 14 days. If you’d like them to keep longer, store them in the refrigerator. 
  • TO FREEZE: Place leftovers in a ziplock bag and store them in the freezer for up to 6 months.
