For the Donuts:
- 3 tablespoons butter
- 1 10 oz bag mini marshmallows
- 1/2 cup canned pumpkin purée not pumpkin pie filling
- 1 teaspoon pumpkin pie spice
- Pinch of salt
- 6 cups Rice Krispies cereal
- A few drops of orange food coloring optional
- Nonstick spray or butter for hands and donut pan
For the Maple Cinnamon Glaze:
- 3/4 cup powdered sugar
- 2 tablespoons milk more if needed to thin
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Prepare the Pan: Spray or grease a donut pan generously. If shaping by hand, grease your hands and work surface.
Melt Base: In a large pot over medium-low heat, melt butter. Add marshmallows, stirring until nearly melted.
Add Pumpkin & Spice: Stir in pumpkin purée, pumpkin pie spice, salt, and optional food coloring. Mix until smooth.
Mix in Cereal: Remove from heat. Fold in Rice Krispies until fully coated.
Shape Donuts: Press mixture firmly into prepared molds. Let cool completely before removing.
Make Glaze: Whisk powdered sugar, milk, cinnamon, and salt until smooth. Adjust consistency as needed.
Glaze & Serve: Dip tops or drizzle glaze over donuts. Let set before serving.
- Do not overheat marshmallow mixture to keep donuts soft.
- Work quickly once cereal is added to prevent uneven shaping.
