Ingredients

  • 1 cup 120g roasted red peppers, diced
  • 1 cup 100g shredded mozzarella cheese
  • ¼ cup 10g fresh basil, chopped (or 1 tbsp dried)
  • 2 cloves garlic minced
  • 1 tsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp crushed red pepper flakes optional
  • Toothpicks or kitchen twine
  • Fresh Spinach: About 4 cups of fresh spinach will provide great color and nutritional value

Instructions
 

Preheat Oven

  • I preheat the oven to 375°F (190°C) for this savory chicken dish.

Prepare Filling

  • In a bowl, I mix 1 cup diced roasted red peppers, 1 cup mozzarella, ¼ cup basil, 2 minced garlic cloves, a drizzle of olive oil, salt, and pepper for this cheesy stuffed delight.

Stuff Chicken

  • I slice a pocket in each of 4 chicken breasts, stuff with filling, and secure with toothpicks for this Roasted Red Pepper & Mozzarella Stuffed Chicken.

Season and Sear
