For the Baked Potatoes
- 4 large Russet potatoes
- 4 oz cream cheese softened
- ¼ cup sour cream
- 1 tablespoon garlic powder
- Salt & pepper to taste
- 2 tablespoons chopped chives or green onions
For the Seafood
- 1 lb raw shrimp peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon onion powder
- 1 tablespoon liquid crab boil optional
- 4 tablespoons butter
- 2 tablespoons minced garlic
For the Seafood Cheese Sauce
- 4 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups heavy cream
- Reserved seafood cooking liquid
- 1 tablespoon Cajun seasoning
- 1 teaspoon each dried basil & oregano
- 1 tablespoon onion powder
- 2 cups shredded sharp cheddar cheese
- ½ cup shredded Monterey Jack optional

- ¼ cup shredded mozzarella cheese
- Fresh chives or green onions for garnish
Bake the Potatoes
Preheat your oven to 400°F.
Scrub and dry the Russet potatoes. Poke holes using a fork to vent.
Wrap each in foil and bake for 45–50 minutes or until fork-tender. Alternatively, microwave on high for 5 minutes per potato.
Prepare the Filling
Once baked, slice each potato down the center and scoop the insides into a bowl.
Mash with cream cheese, sour cream, garlic powder, salt, pepper, and chives. Cover to keep warm.
Cook the Seafood
Season shrimp with Cajun seasoning, onion powder, and liquid crab boil (if using).
In a skillet, melt butter and sauté garlic for 30 seconds. Add shrimp and cook for 3–4 minutes.
Reserve the cooking liquid and set the shrimp aside.
Make the Creamy Seafood Sauce
In the same skillet, melt butter and whisk in flour to make a roux.
Slowly add heavy cream and the reserved seafood liquid.
