Ingredients

For the Dish:

  • 2 lbs 900g boneless, skinless chicken thighs
  • cup 80ml honey
  • ¼ cup 60ml sriracha sauce
  • ¼ cup 60ml soy sauce (or tamari for gluten-free)
  • 3 garlic cloves minced
  • 2 tbsp 30ml rice vinegar
  • ¼ cup 60ml chicken broth or water
  • 2 tbsp 16g cornstarch + 2 tbsp (30ml) water (for slurry)

For Serving (Optional):

  • Chopped green onions or cilantro
  • Toasted sesame seeds

Instructions

Prep the Ingredients

  • I trim excess fat from 2 lbs chicken thighs for a clean, tender texture in this spicy honey-glazed chicken.

Mix the Sauce

  • In a small bowl, I whisk ⅓ cup honey, ¼ cup sriracha, ¼ cup soy sauce, 3 minced garlic cloves, 2 tbsp rice vinegar, and ¼ cup chicken broth until smooth, crafting a bold sauce for this zesty chicken dish.

Layer in the Slow Cooker

  • I place the chicken thighs in the slow cooker and pour the sauce over, coating each piece evenly for a flavorful sweet-heat dish.

Slow Cook

  • I set the slow cooker to low for 4–6 hours or high for 2–3 hours, until the chicken is tender and cooked through.

Thicken the Sauce

  • I remove the chicken, whisk a slurry of 2 tbsp cornstarch and 2 tbsp water into the sauce, and cook on high for 10–15 minutes until thickened. I return the chicken to coat in the glossy sauce.

Serve

  • I garnish with green onions or sesame seeds and serve hot, enjoying the spicy honey-glazed chicken.

Notes

  • Use dark meat (chicken thighs) for juicier results.
  • No need to brown the chicken beforehand to save time.
  • Adjust heat gradually by starting with less sriracha.
  • Add cornstarch slurry slowly to control sauce thickness.
  • Garnish with fresh herbs like cilantro or green onions for brightness.
