Ingredients

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • ½ cup milk chocolate chips

For the Ganache and Topping:

  • 1 cup milk chocolate chopped
  • ½ cup heavy cream
  • 1 cup large marshmallows or mini, if preferred

Instructions
 

Make the Crust

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the texture is like wet sand.
  • Press the crust evenly into the bottom of the pan.
  • Bake for 10 minutes, then set aside to cool.

Prepare the Filling

  • Beat the softened cream cheese and sugar until smooth and creamy.
  • Add in sour cream, eggs, and vanilla. Mix just until combined—don’t overmix.
  • Gently fold in mini marshmallows and chocolate chips.
  • Pour the filling over the cooled crust.

Bake the Cheesecake

  • Bake for 45–50 minutes, or until the center is just set and slightly jiggly.
  • Let it cool to room temperature in the oven with the door slightly ajar.
  • Transfer to the fridge and chill for at least 4 hours, preferably overnight.

Make the Ganache

  • In a small saucepan, heat heavy cream until just simmering.
  • Remove from heat and pour over chopped chocolate. Let sit for 2 minutes, then stir until silky and smooth.

Decorate and Serve

  • Pour the ganache over the chilled cheesecake, spreading it evenly.
  • Top with marshmallows and use a kitchen torch to toast them until golden and melty.
  • Slice, serve, and prepare to fall in love.
