For the Crust:
- 2 cups graham cracker crumbs
- ½ cup unsalted butter melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling:
- 16 oz cream cheese softened
- ½ cup granulated sugar
- ½ cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- ½ cup milk chocolate chips
For the Ganache and Topping:
- 1 cup milk chocolate chopped
- ½ cup heavy cream
- 1 cup large marshmallows or mini, if preferred
Make the Crust
Preheat your oven to 350°F (175°C).
Grease a 9-inch springform pan and line the bottom with parchment paper.
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the texture is like wet sand.
Press the crust evenly into the bottom of the pan.
Bake for 10 minutes, then set aside to cool.
Prepare the Filling
Beat the softened cream cheese and sugar until smooth and creamy.
Add in sour cream, eggs, and vanilla. Mix just until combined—don’t overmix.
Gently fold in mini marshmallows and chocolate chips.
Pour the filling over the cooled crust.
Bake the Cheesecake
Bake for 45–50 minutes, or until the center is just set and slightly jiggly.
Let it cool to room temperature in the oven with the door slightly ajar.
Transfer to the fridge and chill for at least 4 hours, preferably overnight.
Make the Ganache
In a small saucepan, heat heavy cream until just simmering.
Remove from heat and pour over chopped chocolate. Let sit for 2 minutes, then stir until silky and smooth.
Decorate and Serve
Pour the ganache over the chilled cheesecake, spreading it evenly.
Top with marshmallows and use a kitchen torch to toast them until golden and melty.
Slice, serve, and prepare to fall in love.
- Room-temp ingredients are key for a smooth filling with no lumps.
- Don’t overbeat the batter—just mix until combined to avoid cracks.
- Bake with a water bath if you want an extra-smooth, crack-free texture.
- Cool gradually to help prevent sinking or cracking.
- Use a kitchen torch for the best marshmallow toast—it's worth it!
