Ingredients
  

  • 2 lbs 900g boneless, skinless chicken thighs or breasts
  • 1 cup 150g pineapple chunks (fresh or canned, drained)
  • ½ cup 120ml soy sauce
  • ½ cup 100g brown sugar
  • ¼ cup 60g ketchup
  • 1 tbsp 15ml rice vinegar
  • 1 tbsp minced garlic
  • 1 tbsp grated fresh ginger
  • ½ tsp black pepper
  • ½ cup chopped green onions for garnish
  • 1 tbsp sesame seeds optional garnish

Instructions
 

Prepare Chicken

  • I place 2 lbs chicken in the crockpot for this sweet island dish.

Mix Sauce

  • In a bowl, I whisk 1 cup pineapple chunks, ½ cup soy sauce, ½ cup brown sugar, ¼ cup ketchup, 1 tbsp rice vinegar, 1 tbsp garlic, 1 tbsp ginger, and ½ tsp pepper until smooth for this pineapple chicken delight.

Combine and Cook

  • I pour sauce over chicken, cover, and cook on low for 6–8 hours or high for 3–4 hours until tender for this Sweet Hawaiian Crockpot Chicken.

Shred Chicken

  • I remove chicken, shred with forks, return to crockpot, and let sit on warm for 10 minutes to absorb flavors for this simple recipe.
