  • 3 envelopes unflavored gelatin about 2 1/2 tablespoons
  • 1/2 cup cold water for blooming gelatin
  • 1 1/2 cups granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup water for sugar syrup
  • 1 teaspoon cotton candy flavoring available at specialty baking stores or online
  • Food coloring optional for vibrant marshmallows
  • 1/2 cup powdered sugar for dusting
  • 1/4 cup cornstarch for dusting

Instructions
 

  • Prepare the Gelatin: In a large mixing bowl, sprinkle the unflavored gelatin over 1/2 cup of cold water. Let it bloom for 5 minutes to absorb the liquid fully.
  • Cook the Sugar Syrup: In a saucepan, combine 1 1/2 cups granulated sugar, 1/2 cup corn syrup, and 1/2 cup water. Heat the mixture over medium-high heat until it reaches 240°F (115°C) on a candy thermometer. This step ensures the right marshmallow texture.
  • Combine and Whip: Carefully pour the hot sugar syrup into the bloomed gelatin while mixing on low speed. Increase to medium-high and whip for 10-15 minutes until the mixture becomes thick, glossy, and tripled in volume.
  • Add Cotton Candy Flavor: Add 1 teaspoon of cotton candy flavoring and a few drops of food coloring (if desired). Continue whipping until fully incorporated.
  • Set the Marshmallows: Grease a 9x9-inch baking pan and line it with parchment paper. Pour in the marshmallow mixture, smoothing the top with a spatula. Let it set at room temperature for at least 4 hours (or overnight) until firm.
  • Cut and Dust: Mix 1/2 cup powdered sugar and 1/4 cup cornstarch in a bowl. Dust the marshmallow surface, then cut into squares using a greased knife or scissors. Toss the pieces in the sugar mixture to prevent sticking.
