Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3-4 cloves garlic minced
  • 1 lbs lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar marinara sauce Rao's (24 oz)
  • 1 can diced tomatoes juices included, 14.5 oz
  • ¼ cup water
  • 10 oz lasagna noodles
  • 1 ½ cups cottage cheese
  • ½ cup shaved parmesan
  • ½ cup shredded mozzarella cheese
  • 1 cup spinach chopped

Garnish (optional)

  • ½ cup cottage cheese
  • 2 tbsp chopped basil

Instructions
 

  • In a large Dutch oven or soup pot, heat olive oil over medium heat. Sauté chopped onion and garlic for 3-4 minutes until fragrant.
  • Add ground beef and cook until browned, about 4-6 minutes. Drain any excess fat if needed.
  • Stir in tomato paste, Italian seasoning, salt, and pepper. Cook for another minute.
  • Add marinara sauce, beef broth, water, and diced tomatoes. Stir well. Break lasagna noodles into bite-sized pieces and add to the pot. Cover and simmer for 12–15 minutes, or until noodles are tender.
  • Lower the heat. Stir in cottage cheese, mozzarella, and parmesan until melted and creamy.
  • Add fresh spinach and stir until wilted. Taste and adjust seasoning. Serve hot, garnished with extra cheese, fresh basil, or a dollop of ricotta.

Notes

  • Don’t overcook the noodles: Keep an eye on them to avoid mushiness.
  • Add cheese just before serving: This keeps it melty and delicious.
  • Make it ahead: Cook everything but the pasta, then add noodles and cheese just before serving to keep the texture perfect.
  • Store leftovers: Keep in an airtight container in the fridge for up to 3 days. Reheat gently on the stove
