Instructions

  • Shape the Bars: Line a baking sheet with parchment paper or a silicone mat. Using a scoop, place 4-6 mounds of the yogurt mixture onto the sheet. Insert a popsicle stick into each mound, then flatten slightly with a spatula.
  • Add Crunch: Sprinkle roasted salted peanuts over the yogurt mounds for a satisfying crunch.
  • Freeze: Place the tray in the freezer for at least 2 hours or until the bars are solid.
  • Prepare the Chocolate Coating: Melt the chocolate and coconut oil together in the microwave or over a double boiler, stirring until smooth.
  • Dip the Bars: Once frozen, remove the yogurt bars from the tray. Dip each bar into the melted chocolate, ensuring a full, even coating. Let the excess chocolate drip off.
